Lighten Up
Here's an easy idea for a meal that will fill you up without weighing you down.
Prep Time: 20 minutes
Yield: 4 Servings
Ingredients:
- 1 pkg. ASIAN SENSATIONS® White Meat Chicken Egg Rolls or ASIAN SENSATIONS® Pork & Vegetable Egg Rolls
- 1 lb. Romaine lettuce, rinsed, dried, torn
- 16 grape tomatoes, rinsed
- 4 tbsp. medium pitted ripe black olives, sliced
- 3/4 cup Caesar dressing
- 4 tsp. shredded Parmesan cheese
- black pepper, freshly ground
Instructions:
Preheat grill to medium heat. Place egg rolls directly on grill surface. Close grill
cover and cook for 12 to 14 minutes, turning often. Remove from grill and allow to cool
slightly before cutting each egg roll diagonally in half.
For a single serving place 1/4 of the Romaine lettuce, 4 grape tomatoes, 1 tbsp. black
olives, and 3 tbsp. dressing in a medium mixing bowl and gently toss together.
To assemble, place lettuce mixture on a large plate. Top with grilled egg roll.
Garnish with 1 tsp. grated Parmesan cheese and a touch of freshly ground black pepper.
Serve immediately
